1 - 6oz Canned Tuna, drained
1 - Egg
1/2 cp - Italian Seasoned Bread Crumbs
1/3 cp - minced onions
1/4 cp - Mayo
2 tbls - Chili Sauce
1/2 tsp- dried dill weed
1/4 tsp - salt
1/8 tsp - black pepper
1 dash - hot sauce
1 dash - Worcerstershire sauce
4 - Humburger buns
1 - Tomato sliced
4 - leaves of lettuce
Directions
1. Combine tuna, egg, bread crumbs, onion, celery, red bell pepper, mayo, hot chili sauce, dill, salt, pepper, hot sauce, and worcerstershire sauce. Mix Well.
2. Shape into 4 patties (mixture will be soft and delicate)
3. Refrigerate for 30 mins to make the patties easier to handle, if desired
4. Coat a non-stick skillet with cooking spray; fry tuna patties for 3-4 mins per side, or until cooked through. (these are fragile, be careful when turning over)
5. Serve on buns with tomato slices and lettuce, if desire.
Classic Tuna Noodle Casserole

10oz - Egg Noodles
6 tbls - Butter
1/2 cp - Parmesan Cheese
2 - Celery Ribs - minced
3 - Shallots - minced
2 tbls - Flour
3 cp- Milk
1 tsp - Salt
1/2 tsp - pepper
1 - Canned Tuna, drained
1/2 cp dried bread crumbs
Preheat Broiler
In a large pot of boiling water, cook the egg noodles for 5 mins., drain. Place noodles in a 13x9x2 baking dish. Stir 1 Tbls of butter into the noddles and then sprinkle the noodles with 1/4 cp of Parmesan cheese.
In a md sauce pan melt 2 Tbls of butter, add the celery and shallots and cook over medium heat until the veggies are tender. Sprinkle the veggies over the noodles.
In the same sauce pan add 2 Tbls of butter and melt over medium heat. Whisk in 2 Tbls of flour. Cook 1-2 mins, making sure the flout is blended into the butter. Whisk in the milk a little at a time. The sauce should thicken a little in-between adding the milk. When all the milk is added to the sauce and after it has thickened a little, stir in the tuna.
Pour the sauce over the noodles and veggies in the pan. Stir to combine all the ingredients. broil the casserole 5 inches from the heat. Casserole will be hot and bubbly after about 4 mins. Remove from oven and add the remaining Parmesan cheese and the breadcrumbs together in a small bowl and sprinkle over the top of the bubbling tuna casserole. Add the remaining Tbl of butter to the top of the breadcrumb mixture.
Return the casserole to the broiler and broil an additional min or two, or until the topping is browned (be sure to keep a close watch, as this will brown very quickly).
